On the one hand, brown boletes are attributed to lack of nutritional value - on the other hand, they are an irreplaceable element of traditional dishes, meats and soups. Loved for its deep aroma and the joy of picking straight from the forest. Mushrooms, and above all brown boletes, are a real delicacy - also in dried form. Why is it worth eating them, what dishes should you use and how to store them so that they always taste delicious?

Due to their dark hats, they are often called black caps by mushroom pickers. They belong to the boletus family and, next to the noble boletus, are the most popular mushrooms, and additionally they are very tasty and versatile in use. Dried, sliced legs and boletus hats will be an ideal ingredient of traditional mushroom soup, stew, Christmas Eve dumplings with cabbage and mushrooms or Italian risotto.

The mushroom picking season is short, and Polish cuisine would be lackluster without dried mushrooms. Already three boletes can completely change a dish, so their precious hats are sometimes reserved for special occasions, so that they can be represented by less exquisite mushrooms on a daily basis. Dry boletes, like their relatives, contain a lot of protein. So there is no reason to eat them only on holidays!

The protein content of mushrooms is primarily influenced by their form and age. Dried boletes contain 10 to 40% of it, although it should be noted that it is a less digestible protein. Its big advantage, however, is the presence of a high amount of lysine, an amino acid that does not occur naturally in the human body, and additionally is not common, for example, in cereal products. For this reason, it is worth adding mushrooms to, for example, flour dishes, while preparing dumplings with cabbage and mushrooms, pasta in mushroom sauces, risotto with boletus and the like. In addition to lysine, dried black caps provide B vitamins, namely riboflavin (B2) and niacin (B3).

Directions for use:

Targroch sliced boletes are portioned at 20 grams so that they can be used quickly. If you only need a few pieces for a sauce or barley soup, put the remaining mushrooms in a glass jar or paper bag. Plastic containers and foil packages are not suitable for this, because in the former the smell will remain very difficult to remove, and in the latter there is a risk of mold growth. Regardless of how you decide to store boletes, remember to put them in a dry and airy place. In such conditions, dried mushrooms can be eaten for up to 2-3 years.
