Coconut sugar, also known as coconut flower sugar, is obtained from the sweet juice present in the flowers. It is a similar, but different type of sugar than palm sugar obtained from the palm tree. Coconut sugar particles are similar in colour to cane sugar, but they are smaller. It is suitable for vegans and naturally gluten-free. Country of origin: Indonesia.
In coconut sugar there are trace amounts of the nutritional elements also present in the coconut palm. These include minerals such as iron, zinc, calcium and potassium. Sugar also contains short-chain fatty acids (polyphenols and antioxidants).
- Coconut sugar is as caloric as traditional white sugar. It raises blood sugar levels to a lesser extent, but it still contains fructose. Therefore, coconut sugar, like crystal white, is recommended to be consumed in moderation. Coconut sugar tastes like brown sugar. It also gives the prepared desserts a slightly nutty colour.
- The glycemic index of coconut sugar ranges from 35 to 42 GI (depending on the manufacturer), which is considered a low value for this index. For comparison - white sugar has a GI of 60.
- Coconut sugar, in addition to having a lower GI than white refined sugar, contains inulin - a fiber that slows down the absorption of sugars. Although coconut sugar has a lower GI, mineral and fiber content, it is still (as well as white sugar) half fructose.
- Fructose, naturally present in fruit and consumed in moderate amounts, is not harmful. However, its excess, especially in obese people, can lead to diabetes and other metabolic diseases.
Directions for use:
Coconut sugar can be added to baked goods, coffee, ice cream or main courses. It gives the prepared dishes a sweet taste.
The recommended daily intake is 3g.
